Almost No-Knead Artisan Bread

Ingredients

Bread Dough

  • 3 cups all-purpose flour
  • 2 tablespoons sugar
  • teaspoons salt
  • ½ teaspoon dry active yeast
  • cups water (room temperature)

Proof and Bake

  • 1 teaspoon olive oil
  • ½ cup flour (to finish dough and use on countertop)
  • water to brush the bread with

Instructions

  1. Mix all dry ingredients in a bowl and whisk well.
  2. Add water and stir until a wet, sticky dough forms.
  3. Place the dough in an oiled bowl, cover with plastic wrap, and let rise for 12-16 hours.
  4. Flour a countertop and dump the dough onto it, adding more flour until it's manageable.
  5. Flatten the dough into a rectangle and fold it in thirds, then in half.
  6. Shape the dough into a disc or oblong loaf and place on parchment paper.
  7. Cover the dough and let it rise for 30-40 minutes while preheating the oven to 450°F.
  8. Cut a design on top of the dough and brush with water.
  9. Carefully place the dough in a preheated cloche or Dutch oven and bake for 30 minutes.
  10. Remove the lid and allow the bread to bake for an additional 10 minutes.
  11. Let the bread rest for at least an hour before cutting.
