Ingredients

  • 425 g all-purpose or bread flour
  • ½ teaspoon instant yeast
  • 1 1/4 teaspoons salt
  • 1 ½ cups warm water

Instructions

  1. In a large bowl, combine flour, yeast, and salt.
  2. Add warm water and stir until blended; the dough will be shaggy and sticky.
  3. Cover the bowl with plastic wrap and let it rest at room temperature for at least 12 hours, preferably 18.
  4. After resting, generously flour a work surface and place the dough on it.
  5. Gently fold the dough over itself a couple of times and let it rest for 30 minutes.
  6. Preheat the oven to 450 degrees Fahrenheit and place a covered pot inside to heat.
  7. Carefully remove the hot pot from the oven and transfer the dough (on parchment paper) into the pot.
  8. Cover with the lid and bake for 35-40 minutes, then remove the lid and bake for an additional 10-15 minutes until golden brown.
