Ingredients

  • 3 cups all-purpose flour
  • ¼ teaspoon instant yeast
  • teaspoons salt
  • cups water

Instructions

  1. In a large bowl, whisk together the flour, yeast, and salt.
  2. Add the water and mix until you have a shaggy, sticky dough.
  3. Cover the bowl with plastic wrap and let it rest for 18 hours at room temperature.
  4. Once the dough is ready, place it on a floured surface and fold it over itself a few times.
  5. Let the dough rest for about 15 minutes.
  6. Shape the dough into a ball and place it seam side down on a floured kitchen towel.
  7. Cover the dough and let it rise for 2 hours.
  8. Preheat the oven to 450°F and place a heavy covered pot inside.
  9. When the dough is ready, carefully remove the pot from the oven and turn the dough into it, seam side up.
  10. Cover the pot and bake for 30 minutes.
  11. Remove the lid and bake for an additional 15-30 minutes until browned.
  12. Allow the bread to cool for one hour on a wire rack.
