No-Knead Artisan Bread

Ingredients

  • 3 cups lukewarm water
  • tablespoons granulated yeast
  • tablespoons kosher salt
  • cups unsifted, unbleached, all-purpose white flour

Instructions

  1. Warm the water to about 100ºF.
  2. Mix yeast and salt into the water in a large bowl or container.
  3. Add all the flour at once and mix until uniformly moist.
  4. Cover and let the mixture rise at room temperature for about 2 hours.
  5. Refrigerate the dough overnight for easier handling.
  6. On baking day, sprinkle flour on the dough and cut off a grapefruit-sized piece.
  7. Shape the dough into a ball and let it rest on a cornmeal-covered surface for about 40 minutes.
  8. Preheat the oven to 450ºF and prepare a baking stone or pan.
  9. Dust the loaf with flour and make several slashes on top.
  10. Bake for about 30 minutes until the crust is browned and firm.
