Bourbon and Coke Braised Short Ribs

Ingredients

The ribs and marinade

  • 1–6 individual Beef Short Ribs
  • ½ TBSP Mustard (for rub binder)
  • 2 cups Coca Cola
  • 1/8 cup Bourbon
  • wood chunks for smoke your choice

The BBQ glaze

  • 2 cups KC Masterpiece Classic BBQ Sauce (or BBQ sauce of your choice)
  • 1 cup Honey
  • 2 TBSP Beef and Game Pit Rub

Instructions

  1. Remove the ribs from the package and peel off the thick membrane on the back.
  2. Trim off excess fat, rinse with cold water, and pat dry.
  3. Season the ribs with beef and game pit rub and add mustard, massaging it into the meat.
  4. Light the Pit Barrel Cooker and add wood chips for smoke.
  5. Oil the grill grate and place the ribs bone side down.
  6. Cook until the internal temperature reaches 165°F, about 1 ½ hours.
  7. Transfer the ribs to an aluminum pan, add Coca Cola and bourbon, cover with foil, and cook for 2 more hours.
  8. Remove the ribs from the pan, glaze with BBQ sauce, and cook for an additional 10 to 15 minutes to set the glaze.
  9. Let the ribs rest loosely covered with foil for 10 to 15 minutes before serving.
