Bourbon and Coke Braised Short Ribs

Beef and Game Pit Rub
Instructions
- Remove the ribs from the package and peel off the thick membrane on the back.
- Trim off excess fat, rinse with cold water, and pat dry.
- Season the ribs with beef and game pit rub and add mustard, massaging it into the meat.
- Light the Pit Barrel Cooker and add wood chips for smoke.
- Oil the grill grate and place the ribs bone side down.
- Cook until the internal temperature reaches 165°F, about 1 ½ hours.
- Transfer the ribs to an aluminum pan, add Coca Cola and bourbon, cover with foil, and cook for 2 more hours.
- Remove the ribs from the pan, glaze with BBQ sauce, and cook for an additional 10 to 15 minutes to set the glaze.
- Let the ribs rest loosely covered with foil for 10 to 15 minutes before serving.
