Ingredients

The meat

  • 2-2½ lbs beef short ribs

The dry rub

  • 2 tablespoon kosher salt
  • 2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried oregano
  • 1 teaspoon smoked paprika or sweet paprika

For cooking

  • as needed olive oil
  • as needed wood chips (e.g., mesquite)
  • as needed barbecue sauce

Instructions

  1. Mix the dry rub ingredients in a small bowl.
  2. Rub the short ribs with olive oil and coat them generously with the dry rub.
  3. Let the ribs marinate for at least 30 minutes.
  4. Preheat the smoker to 225°F.
  5. Place the wood chips in the smoker.
  6. Put the short ribs on a rack in the smoker and cook for 3 hours.
  7. Wrap the short ribs in aluminum foil and return them to the smoker for an additional 2 hours, until the internal temperature reaches 200-205°F.
  8. Remove the ribs from the smoker, slather them with barbecue sauce, and return to the smoker for 30 more minutes.
  9. Allow the ribs to rest for 15 minutes before serving.
