Instructions
- Mix the dry rub ingredients in a small bowl.
- Rub the short ribs with olive oil and coat them generously with the dry rub.
- Let the ribs marinate for at least 30 minutes.
- Preheat the smoker to 225°F.
- Place the wood chips in the smoker.
- Put the short ribs on a rack in the smoker and cook for 3 hours.
- Wrap the short ribs in aluminum foil and return them to the smoker for an additional 2 hours, until the internal temperature reaches 200-205°F.
- Remove the ribs from the smoker, slather them with barbecue sauce, and return to the smoker for 30 more minutes.
- Allow the ribs to rest for 15 minutes before serving.
