Ingredients

The eggplant

  • 1 large eggplant
  • 2 tsp kosher salt

The coating

  • 2 large eggs
  • 1 cup almond flour
  • ¼ cup grated parmesan cheese
  • 2 Tbsp flaxseed meal
  • 1 tsp dried oregano
  • 1 tsp garlic powder
  • ¼ tsp onion powder
  • ¼ tsp black pepper

The assembly

  • 2 cups marinara sauce
  • 8 oz mozzarella cheese

Garnish

  • to taste fresh basil

Instructions

  1. Preheat the air fryer to 375°F and slice the eggplant into 1/4-inch rounds, then sprinkle with salt and let sit for 30 minutes.
  2. Pat the eggplant slices dry to remove excess moisture.
  3. Prepare two bowls: one with beaten eggs and the other with a mixture of almond flour, parmesan cheese, flaxseed meal, and seasonings.
  4. Dip each eggplant slice in the egg, then coat with the almond flour mixture.
  5. Spray the air fryer basket with nonstick spray and arrange the eggplant slices in a single layer.
  6. Air fry the slices for 5 minutes, flip them, and then air fry for an additional 4 minutes until golden and crispy.
  7. In a casserole dish, layer marinara sauce, eggplant slices, and mozzarella cheese, repeating the layers.
  8. Broil in the oven for 3 to 5 minutes until the cheese is melted and bubbly, watching closely to prevent burning.
  9. Serve hot, garnished with fresh basil.
