Instructions
- Preheat the air fryer to 375°F and slice the eggplant into 1/4-inch rounds, then sprinkle with salt and let sit for 30 minutes.
- Pat the eggplant slices dry to remove excess moisture.
- Prepare two bowls: one with beaten eggs and the other with a mixture of almond flour, parmesan cheese, flaxseed meal, and seasonings.
- Dip each eggplant slice in the egg, then coat with the almond flour mixture.
- Spray the air fryer basket with nonstick spray and arrange the eggplant slices in a single layer.
- Air fry the slices for 5 minutes, flip them, and then air fry for an additional 4 minutes until golden and crispy.
- In a casserole dish, layer marinara sauce, eggplant slices, and mozzarella cheese, repeating the layers.
- Broil in the oven for 3 to 5 minutes until the cheese is melted and bubbly, watching closely to prevent burning.
- Serve hot, garnished with fresh basil.
