Quinoa and Burrata Caprese Salad

Ingredients

  • 2 medium tomatoes, sliced
  • 1 packaged ball Burrata cheese
  • ½ cup quinoa, cooked
  • 5-6 leaves basil, thinly sliced
  • 1 ½ tablespoons extra-virgin olive oil
  • 2 teaspoons balsamic vinegar
  • to taste kosher salt
  • to taste freshly ground black pepper

Instructions

  1. Layer tomato slices in a salad bowl or plate.
  2. Remove the Burrata cheese from its package and drain the water.
  3. Gently tear the cheese ball in half, reserving one half for another use.
  4. Add the quinoa and basil leaves to the bowl.
  5. Drizzle with olive oil and balsamic vinegar.
  6. Season with kosher salt and freshly ground pepper, then serve.
