Ingredients

Dressing

Salad

  • 2 cups cooked quinoa

  • ½ cup kalamata olives
  • ½ cup fresh basil
  • 8 ounces mozzarella balls

Instructions

  1. Make the dressing by blending balsamic vinegar, minced garlic, maple syrup, Dijon mustard, and sea salt until well combined.
  2. With the blender running, add olive oil in a steady stream.
  3. Cook the quinoa according to package instructions and let it cool on a baking sheet.
  4. Chop the tomatoes, red onion, olives, basil, and mozzarella.
  5. In a large bowl, combine the cooled quinoa with the chopped ingredients.
  6. Toss the mixture with the desired amount of dressing and transfer to a serving bowl.
