Caprese Zucchini Salad

Ingredients

  • 2 medium zucchini
  • 1 cup cherry tomatoes
  • ¾ cup fresh mozzarella pearls
  • ½ small red onion
  • ½ cup fresh basil
  • ½ cup balsamic vinaigrette
  • to taste black pepper

Instructions

  1. Prepare all the ingredients and slice the zucchini.
  2. Pat the zucchini dry with paper towels to remove excess moisture.
  3. Combine all ingredients in a large bowl and toss with the dressing.
  4. Let the salad marinate in the fridge for 30 minutes before serving.
  5. Toss again and season with salt and pepper to taste.
  6. Garnish with additional fresh basil and black pepper before serving.
