Caprese Zucchini Salad

The salad

The marinade

lemon juice

balsamic vinegar

olive oil

Instructions
- 1. Spiralize the zucchini and trim to 5 inches or less.
- 2. Halve the cherry tomatoes.
- 3. In a bowl, combine the zucchini and tomatoes.
- 4. For the marinade, pulse the marinade ingredients in a food processor until smooth.
- 5. Pour the marinade over the zucchini and tomatoes, and toss to combine.
- 6. Refrigerate to marinate for at least 10 minutes.
- 7. Add the mozzarella and basil, toss gently, and serve.
