Marinated Summer Caprese Salad

Ingredients

  • 2 cups cherry tomatoes, sliced in half
  • 8 oz fresh mozzarella balls, ciliegine
  • 1/3 cup olive oil
  • 1 Tbsp balsamic vinegar
  • 2 cloves garlic, minced
  • 1/4 cup basil leaves, finely chopped
  • 1 tsp onion powder
  • 1/2 tsp dried oregano
  • 1/2 tsp red pepper flakes
  • 1/4 tsp salt
  • 1/4 tsp pepper

Instructions

  1. Prepare the marinade by whisking together olive oil, balsamic vinegar, minced garlic, chopped basil, onion powder, oregano, red pepper flakes, salt, and pepper in a small bowl or jar.
  2. In a large bowl, combine the sliced tomatoes and mozzarella balls, then drizzle the marinade over them.
  3. Toss everything together until well coated, cover with plastic wrap, and refrigerate to marinate for at least 2 hours or up to overnight.
  4. Before serving, take the salad out of the fridge 30 minutes to an hour prior to allow it to come to room temperature.
  5. Add more fresh basil and adjust seasonings as needed before serving.
