Caprese Salad

Ingredients

The salad

  • 2 balls fresh mozzarella cheese (16 ounces)
  • 2 lbs ripe tomatoes (heirloom, vine-ripened, or cherry)
  • 20 leaves fresh basil
  • to taste salt
  • to taste pepper

The dressing

  • to taste extra virgin olive oil
  • as needed basil oil
  • as needed balsamic glaze

Instructions

  1. Make the basil oil and/or balsamic glaze if using.
  2. Slice the mozzarella into ¼-inch slices.
  3. Slice the tomatoes into ¼-inch slices or halve them if using cherry tomatoes.
  4. Spread a layer of basil oil on a platter, then layer the tomatoes and mozzarella.
  5. Tuck in the basil leaves and season with salt and pepper.
  6. Drizzle with olive oil, basil oil, and balsamic glaze before serving.
