Caprese Grilled Zucchini

Ingredients

The marinade

  • 1 tablespoon avocado oil
  • 1 tablespoon fresh basil, chopped
  • 1 teaspoon red wine vinegar
  • 1 teaspoon lemon juice
  • to taste salt
  • to taste pepper

The main ingredients

  • 1 pound zucchini, sliced
  • 2 ounces fresh mozzarella, torn
  • 1 small tomato, seeded and diced
  • 1 tablespoon balsamic vinegar
  • fresh basil for garnish

Instructions

  1. Combine avocado oil, basil, red wine vinegar, and lemon juice in a small bowl, then season with salt and pepper.
  2. Place zucchini in a large ziplock bag or shallow dish and pour the marinade over it. Let it sit at room temperature for 15 minutes.
  3. Preheat the grill to medium heat.
  4. Grill zucchini for 2 to 3 minutes on each side until grill marks form.
  5. Transfer the zucchini to a parchment-lined baking sheet and top with chopped tomato and torn mozzarella.
  6. Bake in the oven until the cheese melts, about 5 minutes.
  7. Drizzle with balsamic vinegar and garnish with fresh basil before serving.
