Caprese Grilled Zucchini

zucchini, sliced

Instructions
- Combine avocado oil, basil, red wine vinegar, and lemon juice in a small bowl, then season with salt and pepper.
- Place zucchini in a large ziplock bag or shallow dish and pour the marinade over it. Let it sit at room temperature for 15 minutes.
- Preheat the grill to medium heat.
- Grill zucchini for 2 to 3 minutes on each side until grill marks form.
- Transfer the zucchini to a parchment-lined baking sheet and top with chopped tomato and torn mozzarella.
- Bake in the oven until the cheese melts, about 5 minutes.
- Drizzle with balsamic vinegar and garnish with fresh basil before serving.
