Grilled Caprese Zucchini

Instructions
- Preheat the grill or grill pan.
- Slice the zucchini at an angle into ¼-inch thick slices.
- Brush or toss the zucchini slices with olive oil and sprinkle with salt and pepper.
- Grill the zucchini for a few minutes on each side until grill marks appear and they are slightly tender.
- Remove the zucchini from the grill and place on a serving plate.
- Spread a light layer of pesto on each zucchini slice.
- Layer fresh mozzarella cheese on top, followed by tomato slices.
- Sprinkle with kosher salt and black pepper.
- Drizzle with olive oil and balsamic vinegar, then sprinkle with fresh basil.
- Serve warm, at room temperature, or chilled.
