Ingredients

The vegetables

  • 1 each Yellow Squash
  • 1 each Zucchini
  • 1 each Red Bell Pepper

The cheese

  • 1 ball Fresh Mozzarella Cheese

The dressing

  • to drizzle Olive Oil
  • to taste Gagliardo’s Spice Mix or kosher salt and black pepper
  • to drizzle Balsamic Vinegar

The pesto

  • 4 ounces Fresh Basil
  • 2 tablespoons Unsalted Butter
  • 1 clove Garlic
  • 2 ounces Almonds
  • 1 teaspoon Kosher Salt
  • 1 teaspoon Black Pepper
  • cups Extra Virgin Olive Oil
  • 4 ounces Parmesan Cheese

Instructions

  1. Prepare the pesto by blending all ingredients except the oil and cheese until smooth, then slowly add oil and mix in cheese.
  2. Preheat the grill to medium-high heat.
  3. Drizzle the squash and zucchini with olive oil and season with spice mix.
  4. Grill the squash and zucchini until slightly charred, then let cool.
  5. Assemble the salad by alternating grilled vegetables and mozzarella on a plate, drizzling with balsamic vinegar and olive oil, and adding a scoop of pesto.
