Instructions
- Prepare the pesto by blending all ingredients except the oil and cheese until smooth, then slowly add oil and mix in cheese.
- Preheat the grill to medium-high heat.
- Drizzle the squash and zucchini with olive oil and season with spice mix.
- Grill the squash and zucchini until slightly charred, then let cool.
- Assemble the salad by alternating grilled vegetables and mozzarella on a plate, drizzling with balsamic vinegar and olive oil, and adding a scoop of pesto.
