Grilled Zucchini or Summer Squash

Ingredients

The vegetables

  • 1 ½ pounds summer squash

The oil and seasonings

  • 2 tablespoons virgin red palm oil or extra virgin olive oil
  • to taste Kosher salt
  • to taste freshly ground black pepper
  • to taste aged balsamic vinegar

The garnish

  • 1 handful basil leaves

Instructions

  1. Preheat the grill to medium heat.
  2. Lay the squash slices on a foil-lined baking sheet and brush both sides with the palm oil.
  3. Season the squash liberally with salt and pepper.
  4. Cook the squash on the grill for about 8-10 minutes total, flipping at the 4 minute mark.
  5. Before serving, drizzle on the balsamic vinegar and sprinkle with basil.
