Instructions
- Mix sugar, pumpkin pie spice, and salt in a small bowl.
- Beat the eggs until light and pale in a stand mixer.
- Combine the sugar-spice mixture with the eggs.
- Add the pumpkin puree and blend until combined.
- Stir in the evaporated milk and mix well.
- Pour the mixture into a prepared pie shell.
- Bake at 350°F for 40-50 minutes until a knife comes out clean.
- Cool on a wire rack and refrigerate until serving.
