Ingredients

The crust

  • 1 cup all-purpose flour
  • 1 Tbsp all-purpose flour
  • tsp granulated sugar
  • ½ tsp salt
  • ½ cup unsalted butter
  • 3-5 Tbsp ice water
  • 1 large egg white

The filling

  • ¾ cup packed light brown sugar
  • ¼ cup granulated sugar
  • tsp cornstarch
  • ½ tsp salt
  • tsp ground cinnamon
  • ½ tsp ground ginger
  • ½ tsp ground nutmeg
  • tsp ground cloves
  • 2 large eggs
  • 2 large egg yolks
  • 1 15 oz can pumpkin
  • 1 tsp vanilla extract
  • ¾ cup heavy cream
  • ½ cup milk
  • cup sour cream

Instructions

  1. Prepare the pie crust dough and chill it.
  2. Roll and blind bake the crust.
  3. Prepare the pumpkin pie filling by mixing the sugars, cornstarch, salt, and spices, then adding the eggs, pumpkin, vanilla, cream, milk, and sour cream.
  4. Pour the filling into the partially baked pie crust and bake.
  5. Cool to set, then slice and serve with whipped cream.
