Ingredients

The crust

  • 2 cups whole wheat flour

The filling

  • 4 eggs
  • 4 cups pumpkin puree
  • 2 cups whole milk
  • 1⅓ cups maple syrup
  • 2 tsp cinnamon
  • 1 tsp ginger
  • 1 tsp salt
  • ½ tsp nutmeg

Instructions

  1. Mix the flour and salt for the crust in a large bowl.
  2. Process the flour mixture with cold butter until crumbly.
  3. Add maple syrup and cold water, processing until the dough forms a ball.
  4. Divide the dough into two balls, flatten them, wrap in wax paper, and refrigerate for 30 minutes.
  5. Preheat the oven to 350°F.
  6. Roll out the dough and place it in 9-inch pie pans.
  7. Whisk together the filling ingredients until well combined.
  8. Pour the filling into each crust.
  9. Bake for 60 to 70 minutes until the filling is set, checking for jiggliness.
  10. Cool before cutting and serve warm or refrigerate.
