Ingredients

The soup base

  • 2 teaspoons olive oil
  • ½ cup onion, finely chopped
  • 1 pound ground beef
  • 2 teaspoons minced garlic
  • to taste salt and pepper
  • 28 ounces crushed tomatoes
  • 4 cups beef broth
  • 8 ounces tomato sauce
  • teaspoons Italian seasoning
  • 8 pieces lasagna noodles, broken

The toppings

  • ½ cup ricotta cheese
  • ½ cup parmesan cheese, grated
  • ½ cup mozzarella cheese, shredded
  • ¼ cup parsley or basil leaves, chopped

Instructions

  1. Heat olive oil in a large pot over medium heat and cook the onion for 3-4 minutes.
  2. Add ground beef and cook until browned, breaking it up with a spatula.
  3. Stir in minced garlic and cook for an additional 30 seconds.
  4. Season the mixture with salt and pepper to taste.
  5. Add crushed tomatoes, beef broth, tomato sauce, and Italian seasoning, then bring to a simmer.
  6. Add the broken lasagna noodles and cook for 10-12 minutes until softened.
  7. Adjust the thickness of the soup with water or additional broth if necessary.
  8. Taste and season with salt and pepper as needed.
  9. Serve the soup in bowls, topped with ricotta, parmesan, mozzarella, and chopped herbs.
