Instructions
- Heat olive oil in a large pot over medium heat and cook the onion for 3-4 minutes.
- Add ground beef and cook until browned, breaking it up with a spatula.
- Stir in minced garlic and cook for an additional 30 seconds.
- Season the mixture with salt and pepper to taste.
- Add crushed tomatoes, beef broth, tomato sauce, and Italian seasoning, then bring to a simmer.
- Add the broken lasagna noodles and cook for 10-12 minutes until softened.
- Adjust the thickness of the soup with water or additional broth if necessary.
- Taste and season with salt and pepper as needed.
- Serve the soup in bowls, topped with ricotta, parmesan, mozzarella, and chopped herbs.
