Ingredients

The soup

  • ½ lb uncooked 95% lean ground beef
  • ½ lb uncooked 99% lean ground turkey breast
  • 1 medium yellow onion, chopped
  • 4 cloves garlic, minced
  • 1 tablespoon Italian seasoning
  • 1 teaspoon dried basil
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ¼ teaspoon crushed red pepper flakes
  • 2 tablespoons tomato paste
  • 4 cups low sodium beef broth
  • 28 oz can crushed tomatoes
  • 1 cup pasta sauce
  • 8 oz uncooked whole wheat lasagna noodles, broken into 1" pieces
  • ½ cup fat free half and half
  • 1 cup fat free ricotta cheese

Optional garnish

  • to taste dried or fresh parsley

Instructions

  1. 1. In a large pot, cook the ground beef and turkey over medium-high heat until browned.
  2. 2. Add the chopped onion and cook until softened.
  3. 3. Stir in the minced garlic, Italian seasoning, basil, salt, black pepper, and crushed red pepper, cooking for another minute.
  4. 4. Add the tomato paste and cook until softened.
  5. 5. Pour in the beef broth, crushed tomatoes, and pasta sauce, and stir to combine.
  6. 6. Add the broken lasagna noodles, ensuring they are covered by the liquid.
  7. 7. Bring to a boil, then reduce heat and simmer for 15-18 minutes until the pasta is cooked.
  8. 8. Remove from heat and stir in the half and half.
  9. 9. Serve topped with ricotta cheese and parsley if desired.
