Easy Lasagna Soup

Ingredients

The soup base

  • 2 tbsp olive oil
  • 1 small yellow onion
  • 1 small green pepper, diced
  • 1 large zucchini, diced
  • 3 cloves garlic, minced
  • 1 lb ground turkey
  • 1 tsp salt
  • ½ tsp pepper
  • 1 tsp oregano
  • 28 oz jar of marinara sauce
  • 15 oz can diced tomatoes
  • 4 cups chicken stock
  • 2 cups water
  • 9 oz box no-boil lasagna noodles

The toppings

  • to taste fresh parmesan
  • to taste mozzarella

Instructions

  1. Heat olive oil in a large dutch oven or saucepan.
  2. Add onion, green pepper, and zucchini; cook until softened.
  3. Stir in garlic and ground turkey; cook until the meat is no longer pink and drain excess liquid if necessary.
  4. Add salt, pepper, and oregano; stir to combine.
  5. Pour in marinara sauce, diced tomatoes, chicken stock, and water; bring to a boil.
  6. Crush lasagna noodles into smaller pieces and add to the soup.
  7. Cook for 15 minutes or until noodles are tender, stirring occasionally.
  8. Top with fresh parmesan and mozzarella before serving.
