Instructions
- Heat olive oil in a large dutch oven or saucepan.
- Add onion, green pepper, and zucchini; cook until softened.
- Stir in garlic and ground turkey; cook until the meat is no longer pink and drain excess liquid if necessary.
- Add salt, pepper, and oregano; stir to combine.
- Pour in marinara sauce, diced tomatoes, chicken stock, and water; bring to a boil.
- Crush lasagna noodles into smaller pieces and add to the soup.
- Cook for 15 minutes or until noodles are tender, stirring occasionally.
- Top with fresh parmesan and mozzarella before serving.
