One-Bowl Chocolate Cupcakes

Ingredients

The cupcakes

  • ¾ cup all-purpose flour
  • ½ cup unsweetened natural cocoa powder
  • ¾ teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • ½ cup granulated sugar
  • ½ cup packed light brown sugar
  • ½ cup buttermilk
  • cup vegetable or canola oil
  • 2 large eggs, beaten
  • 2 teaspoons pure vanilla extract

The chocolate buttercream

  • 6 ounces good semisweet chocolate
  • ½ pound unsalted or salted butter
  • 1 teaspoon pure vanilla extract
  • cups confectioners’ sugar
  • to taste pinch flaky sea salt

For decoration

  • 14 pieces Oreos
  • 14 pieces orange M&M’s or Reese’s Pieces or Jelly Beans
  • 28 pieces chocolate chips or brown M&M’s or Reese’s Pieces

Instructions

  1. Preheat the oven to 350°F and line a muffin pan with cupcake liners.
  2. In a large bowl, whisk together the dry ingredients.
  3. Add the wet ingredients and stir until just combined.
  4. Spoon the batter into the liners, filling them halfway.
  5. Bake for 18-21 minutes, then allow to cool completely.
  6. For the frosting, melt the chocolate and let it cool.
  7. Beat the butter until fluffy, then add vanilla and confectioners' sugar.
  8. Mix in the melted chocolate and salt until combined.
  9. Frost the cooled cupcakes and decorate with halved Oreos and candies.
