Ingredients

The Muffin Batter

  • ½ cup neutral-flavored oil
  • ½ cup granulated sugar
  • ½ cup packed light brown sugar
  • 2 large eggs
  • ½ cup buttermilk
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 ½ teaspoons baking powder
  • ½ teaspoon salt
  • ¼ teaspoon baking soda
  • 1 to 1 ½ cups chocolate chips

Optional Topping

  • to taste coarse or raw/turbinado sugar

Instructions

  1. Preheat the oven to 350°F and line a 12-cup muffin tin with paper liners.
  2. In a medium bowl, whisk together the oil, granulated sugar, and brown sugar.
  3. Add the eggs, buttermilk, and vanilla, mixing until well combined.
  4. Add the flour, baking powder, salt, and baking soda, then top with chocolate chips.
  5. Mix until no dry streaks remain, being careful not to overmix.
  6. Scoop the batter into the muffin tin, filling each cup about 2/3 full.
  7. Sprinkle the tops with coarse sugar if desired.
  8. Bake for 18-20 minutes until the tops spring back when touched and a toothpick comes out clean.
