Instructions
- Preheat the oven to 350°F and line a 12-cup muffin tin with paper liners.
- In a medium bowl, whisk together the oil, granulated sugar, and brown sugar.
- Add the eggs, buttermilk, and vanilla, mixing until well combined.
- Add the flour, baking powder, salt, and baking soda, then top with chocolate chips.
- Mix until no dry streaks remain, being careful not to overmix.
- Scoop the batter into the muffin tin, filling each cup about 2/3 full.
- Sprinkle the tops with coarse sugar if desired.
- Bake for 18-20 minutes until the tops spring back when touched and a toothpick comes out clean.
