Instructions
- 1. Preheat the oven to 400 degrees and prepare a muffin pan with liners or grease it.
- 2. In a large bowl, whisk together the flour, sugar, baking powder, and baking soda.
- 3. In a medium bowl, whisk the egg until smooth, then add the oil, milk, and vanilla, mixing until combined.
- 4. Combine the wet and dry ingredients, stirring until just mixed (the batter will be lumpy).
- 5. Fold in the chocolate chips.
- 6. Fill the muffin cups with the batter.
- 7. Bake for 18 to 22 minutes until the centers bounce back when pressed.
- 8. Cool the muffins on a rack for a few minutes before removing them from the pan.
