Instructions
- Preheat the oven to 400°F and coat a muffin tin with cooking spray.
- In a bowl, combine flour, sugar, baking powder, 1 cup of chocolate chips, and salt.
- In another bowl, whisk together milk, oil, melted butter, egg, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and stir until just combined.
- Divide the batter evenly into the muffin tin and sprinkle the remaining chocolate chips on top.
- Sprinkle coarse sugar over the muffins if using.
- Bake for 15-18 minutes until golden brown, then let cool for at least 5 minutes before serving.
