Instructions
- Preheat the oven to 400°F (204°C).
- In a large bowl, combine the flour, baking powder, baking soda, cocoa powder, sugar, and ¾ cup of the chocolate chips.
- In another bowl, whisk together the milk, vegetable oil, egg, and vanilla extract until well blended.
- Slowly pour the wet ingredients into the dry ingredients and mix until just combined.
- Spoon the mixture into prepared muffin cases and sprinkle the remaining ¼ cup of chocolate chips on top.
- Bake for 20 minutes or until the muffins are dark, risen, and springy.
