Ingredients

The sauce

  • 4 Tbsp butter, divided
  • 1 Tbsp water
  • 1 lemon or about ½ Tbsp juice
  • pinch cayenne
  • pinch salt and pepper

The main dish

  • 2 English muffins
  • 3 large eggs, divided
  • 2 thick slices ham

Instructions

  1. Separate the whites from the yolk of one egg and whisk the yolk with water and lemon juice in a small sauce pot.
  2. Add butter to the pot and melt over low heat while whisking continuously.
  3. Once melted, keep whisking until the mixture thickens and becomes frothy, then season with salt and cayenne.
  4. Toast the English muffins in a skillet with melted butter until browned on both sides.
  5. Cook the ham slices in the skillet until browned on both sides and place them on the toasted muffins.
  6. In the same skillet, cook the remaining eggs until the whites are set but the yolks are runny.
  7. Top the muffins and ham with the cooked eggs and drizzle with hollandaise sauce.
