Instructions
- Boil water in a large pan, then reduce to a simmer and gently add the eggs.
- Cook the eggs for 5-7 minutes depending on desired yolk consistency, then drain and keep warm.
- In a skillet, heat olive oil and cook the asparagus until tender, then chop roughly.
- In a bowl, whisk together eggs, milk, and seasoning.
- Butter the outside of the bread and layer cheese and asparagus inside two slices.
- Dip the sandwiches in the egg mixture and cook in the skillet until golden brown and cheese is melted.
- Slice the sandwiches into sticks and serve with the soft-boiled eggs, seasoned with salt, pepper, and basil.
