The eggs

  • 4 pieces eggs
  • to taste salt
  • to taste pepper
  • for garnish fresh basil

The asparagus French toast grilled cheese soldiers

  • 1 small bunch asparagus
  • 2 tablespoons olive oil
  • to taste salt
  • to taste pepper
  • 4 pieces thick cut brioche or your favorite bread
  • 4 tablespoons butter
  • 6-8 ounces gruyere or sharp cheddar cheese, shredded
  • 2 eggs eggs
  • ½ cup milk

Instructions

  1. Boil water in a large pan, then reduce to a simmer and gently add the eggs.
  2. Cook the eggs for 5-7 minutes depending on desired yolk consistency, then drain and keep warm.
  3. In a skillet, heat olive oil and cook the asparagus until tender, then chop roughly.
  4. In a bowl, whisk together eggs, milk, and seasoning.
  5. Butter the outside of the bread and layer cheese and asparagus inside two slices.
  6. Dip the sandwiches in the egg mixture and cook in the skillet until golden brown and cheese is melted.
  7. Slice the sandwiches into sticks and serve with the soft-boiled eggs, seasoned with salt, pepper, and basil.
