Instructions
- Whisk together 1 egg, parmesan cheese, mozzarella cheese, crushed red peppers, sea salt, and black pepper until uniform and airy.
- Heat a skillet and melt 1 tsp of butter, then add the egg mixture and cook on medium-low heat, stirring gently until soft curds form. Remove from heat.
- In another bowl, whisk together 1 egg, evaporated milk, sugar, vanilla, cinnamon, and nutmeg. Dip brioche slices in the mixture and set aside.
- Melt 2 tbsp of butter in a skillet, then add the dipped brioche slices, cooking one side until golden. Layer with Swiss cheese, half of the scrambled eggs, another slice of Swiss cheese, and the second dipped brioche slice.
- Cook for 3 minutes on one side, then flip and cook for another 3 minutes. Serve hot, optionally drizzled with maple syrup.
