Ingredients

The bread

  • 10 slices brioche or hearty crusty french bread or sourdough

The custard

  • 4 units eggs
  • ¾ cup whole milk
  • ¼ cup heavy cream
  • 1 Tbsp granulated sugar
  • 2 tsp vanilla extract
  • tsp ground cinnamon

For cooking and serving

  • to taste units butter
  • to taste units warm maple syrup

Instructions

  1. Preheat a non-stick electric griddle to 375°F or use a non-stick skillet over medium-low heat.
  2. In a large shallow dish, whisk together the eggs and cinnamon.
  3. Add milk, cream, sugar, and vanilla to the egg mixture and whisk until well combined.
  4. Butter the griddle just before adding the bread.
  5. Dip each slice of bread into the mixture, flipping to coat both sides, and place on the griddle.
  6. Cook until golden brown on the bottom, about 2 minutes, then flip and cook the other side until golden brown, about 2 minutes more.
  7. Serve warm with maple syrup.
