Brioche French Toast

Ingredients

The French Toast

  • 8 slices brioche bread (about ¾ inch slices)
  • 1 cup milk
  • 4 large eggs
  • ½ tsp cinnamon
  • a pinch nutmeg
  • 1 tbsp maple syrup
  • 1 tsp vanilla extract
  • 8 tsp brown sugar (optional)
  • butter for the pan

For Serving

  • maple syrup, butter and berries for serving

Instructions

  1. Preheat the oven to 250°F and prepare a baking sheet.
  2. In a large shallow bowl, whisk together milk, eggs, cinnamon, nutmeg, maple syrup, and vanilla extract.
  3. In a non-stick frying pan, heat 2 tbsp of butter over medium heat.
  4. Quickly dip slices of brioche into the egg mixture until well coated and add them to the frying pan, cooking 2 at a time.
  5. Cook one side for about 3-4 minutes until golden brown, sprinkle 1 tsp of brown sugar on each slice if desired, then flip to cook the second side.
  6. Cook the second side for a few more minutes until golden brown, then remove to the baking sheet.
  7. Keep the cooked slices warm in the oven while you cook the remaining slices, adding more butter to the pan as needed.
  8. Serve warm topped with maple syrup, butter, and fresh berries if desired.
