Instructions
- Preheat the oven to 450°F (230°C).
- Make diagonal cuts in each side of the fish and season with salt, pepper, and lemon juice.
- Prepare the banana leaves by cutting them into large rectangles and cleaning them.
- Heat the banana leaves over an open flame to make them flexible.
- Place the fish on the leaf, season with spices, and add onions and tomatoes.
- Fold the banana leaves over the fish tightly to seal in the juices.
- Bake the fish for about 12-20 minutes, depending on the thickness of the fish.
- Remove from the oven, let cool, and check for doneness.
