Ingredients

The fish

  • 2-3 fish about one pound or less fillet or whole small fish

The vegetables

  • 1 large onion sliced
  • 2-3 pieces tomatoes sliced
  • 2-3 teaspoons minced garlic
  • 1 teaspoon ginger

The seasonings

  • to taste salt and pepper
  • 1 lemon juice
  • to taste herbs (parsley, basil, thyme)
  • 1-2 teaspoons green seasoning (optional)
  • to taste chicken bouillon or Maggie (optional)

Instructions

  1. Preheat the oven to 450°F (230°C).
  2. Make diagonal cuts in each side of the fish and season with salt, pepper, and lemon juice.
  3. Prepare the banana leaves by cutting them into large rectangles and cleaning them.
  4. Heat the banana leaves over an open flame to make them flexible.
  5. Place the fish on the leaf, season with spices, and add onions and tomatoes.
  6. Fold the banana leaves over the fish tightly to seal in the juices.
  7. Bake the fish for about 12-20 minutes, depending on the thickness of the fish.
  8. Remove from the oven, let cool, and check for doneness.
