Instructions
- Make a citrus jalapeno marinade for the fish.
- Soak skewers in water to prevent burning.
- Marinate the fish for about 30 minutes.
- Warm the grill and place banana leaves on it until pliable.
- Cut banana leaves in half and wrap each fish fillet with a piece, securing with a skewer.
- Grill the packets on medium heat for about 11 minutes on each side, adjusting for thickness.
- Optionally, grill corn and romaine lettuce alongside the fish.
- Serve the grilled fish with the sides prepared.
