Citrus Chili Whitefish Grilled in Banana Leaves

Ingredients

Marinade

  • ½ cup orange or grapefruit juice
  • 1 unit jalapeno, diced
  • 4+ cloves garlic
  • 1–2 tablespoons honey (optional)
  • to taste salt

Fish Preparation

  • as needed pieces banana leaves
  • as needed fillets whitefish
  • as needed skewers for wrapping

Instructions

  1. Make a citrus jalapeno marinade for the fish.
  2. Soak skewers in water to prevent burning.
  3. Marinate the fish for about 30 minutes.
  4. Warm the grill and place banana leaves on it until pliable.
  5. Cut banana leaves in half and wrap each fish fillet with a piece, securing with a skewer.
  6. Grill the packets on medium heat for about 11 minutes on each side, adjusting for thickness.
  7. Optionally, grill corn and romaine lettuce alongside the fish.
  8. Serve the grilled fish with the sides prepared.
