Okonomiyaki Savory Waffles

Ingredients

Savory Waffle Batter

  • 100 ml water
  • ½ tsp dashi powder
  • 2 large eggs
  • 80 g all-purpose flour
  • a pinch salt
  • a pinch sugar
  • 160 g finely chopped cabbage
  • 2 tbsp finely chopped scallions
  • 2 tbsp chopped red pickled ginger
  • 10 g Tenkasu (optional)

Toppings

  • 2 bacon (short cut)

Sauce & Garnish

  • 6 tbsp Okonomiyaki sauce
  • 6 tbsp bonito flakes
  • 2 tbsp aonori seaweed flakes

Instructions

  1. Combine water and dashi powder, then add beaten eggs.
  2. Mix all-purpose flour in a large bowl and combine with the dashi and egg mixture.
  3. Add chopped cabbage, scallions, cooked bacon bits, red pickled ginger, and tenkasu to the batter and mix well.
  4. Take a heaped ladle of batter and pour it into one side of an oiled waffle iron, filling the other side as well.
  5. Press the waffle iron and cook over medium heat for about 2 minutes on each side.
  6. Serve the waffles drizzled with Okonomiyaki sauce and garnished with bonito flakes and aonori seaweed flakes.
