Cabbage Pancakes (Okonomiyaki)

Instructions
- Remove wilted leaves from the cabbage, cut it into quarters, and shred until you have 4-5 cups.
- Shred the carrot and slice the green onions.
- In a bowl, whisk together eggs, water, soy sauce, and sesame oil until smooth.
- Gradually whisk in flour until a thick batter forms.
- Add the shredded cabbage, carrot, and green onion to the batter and mix well.
- Heat oil in a skillet over medium heat and pour in ¾ cup of the batter, pressing it into a circle.
- Cover the skillet to steam the pancake while it cooks until golden brown on one side.
- Flip the pancake and cook until golden brown on the other side.
- Repeat the process, adding more oil as needed.
- For the sriracha mayo, mix mayonnaise and sriracha in a bowl.
- Serve pancakes drizzled with sriracha mayo, topped with sesame seeds and green onions.
