Cabbage Pancakes (Okonomiyaki)

Ingredients

The pancakes

  • 2 extra large eggs
  • ½ cup water
  • Tbsp soy sauce
  • 1 Tbsp toasted sesame oil
  • ¾ to 1 cup all-purpose flour
  • 4-5 cups shredded green cabbage
  • 1 medium carrot
  • 3 medium green onions
  • 2 Tbsp oil for frying

The toppings

  • ¼ cup mayonnaise
  • 2 Tbsp sriracha
  • ½ Tbsp sesame seeds
  • 2 medium green onions

Instructions

  1. Remove wilted leaves from the cabbage, cut it into quarters, and shred until you have 4-5 cups.
  2. Shred the carrot and slice the green onions.
  3. In a bowl, whisk together eggs, water, soy sauce, and sesame oil until smooth.
  4. Gradually whisk in flour until a thick batter forms.
  5. Add the shredded cabbage, carrot, and green onion to the batter and mix well.
  6. Heat oil in a skillet over medium heat and pour in ¾ cup of the batter, pressing it into a circle.
  7. Cover the skillet to steam the pancake while it cooks until golden brown on one side.
  8. Flip the pancake and cook until golden brown on the other side.
  9. Repeat the process, adding more oil as needed.
  10. For the sriracha mayo, mix mayonnaise and sriracha in a bowl.
  11. Serve pancakes drizzled with sriracha mayo, topped with sesame seeds and green onions.
