Chicken and Chorizo Salsa Skillet

Instructions
- Preheat the oven to 400°F.
- In a large, oven-safe skillet, heat a teaspoon of olive oil over medium-high heat.
- Add the sliced sausage and cook until browned, then remove to a side plate.
- Add the remaining olive oil and diced onion to the pan, cooking until tender.
- Stir in the minced garlic and uncooked rice, cooking until toasted.
- Add water, salsa, and reserved sausage, stirring to combine and bring to a simmer.
- Cover the pan and bake in the oven for 25 minutes.
- Remove from the oven, add chicken and olives, cover, and bake for an additional 10 minutes.
- Let sit covered for 10 minutes, then stir to combine and serve.
