Ingredients

  • 20 pieces dried chilies, seeded and soaked to soften
  • 10 pieces fresh red chilies, seeded and sliced
  • 8 pieces shallots, peeled and chopped
  • 4 cloves garlic, peeled and chopped
  • 1 teaspoon belacan, broken into small bits
  • cup cooking oil

Instructions

  1. Pound the sambal ingredients in a mortar and pestle or blend them in a food processor until smooth.
  2. Heat oil in a wok over medium heat until hot.
  3. Add the sambal paste to the wok and stir-fry for a few minutes until the oil separates from the paste.
  4. Remove from heat and transfer to a bowl. Let it cool before storing in an airtight container.
