Instructions
- Preheat the oven to 350°F and arrange the peppers in a baking dish with the cavity side facing up.
- In a mixing bowl, combine the cooked black bean crumbles, cooked quinoa, 1½ cups of shredded cheese, and salsa.
- Spoon the mixture into the cavities of the bell peppers and sprinkle the remaining cheese on top.
- Bake uncovered for 25-30 minutes until the peppers are soft and the cheese is melted.
