Ingredients

The peppers

  • 6 medium bell peppers

The filling

  • 1 package Morningstar Farms Chipotle Black Bean Crumbles
  • 3 cups cooked quinoa
  • 2 cups freshly-shredded Pepper Jack cheese
  • 1 cup good-quality salsa

Optional toppings

  • to taste chopped fresh cilantro
  • to taste diced avocado
  • to taste extra cheese

Instructions

  1. Preheat the oven to 350°F and arrange the peppers in a baking dish with the cavity side facing up.
  2. In a mixing bowl, combine the cooked black bean crumbles, cooked quinoa, 1½ cups of shredded cheese, and salsa.
  3. Spoon the mixture into the cavities of the bell peppers and sprinkle the remaining cheese on top.
  4. Bake uncovered for 25-30 minutes until the peppers are soft and the cheese is melted.
  5. Serve immediately with optional toppings if desired.
