Healthy Homemade Creamy Tomato Basil Soup

Instructions
- Preheat the oven to 400°F.
- Add tomatoes, onion, and garlic to a sheet pan, drizzle with olive oil, and toss with salt and pepper. Roast for 20 minutes until edges are golden.
- In a large pot, heat vegetable broth and cannelini beans over medium heat.
- Once the vegetables are roasted, transfer them to the pot with the broth and beans. Add basil leaves and crushed red pepper if using.
- Blend the mixture with an immersion blender until smooth.
- For the croutons, toss bread cubes with olive oil, salt, and pepper on a sheet tray.
- Roast the croutons at 400°F for 10-11 minutes until golden.
