Ingredients

The soup

  • 16 ounces Tomatoes (Cherry, cocktail, or plum)
  • 1 medium Onion (quartered)
  • 5 cloves Garlic (leave whole)
  • 2 tsp Salt
  • ½ tsp Pepper
  • 15 ounces Cannelini Beans (drained)
  • ½ cup Basil Leaves (preferably fresh)
  • ½ tsp Crushed Pepper (optional)
  • 4 cups Vegetable Broth

The croutons

  • 6-8 slices Sourdough or Italian Bread
  • 2 tbsp Olive Oil
  • 1 tsp Salt
  • ¼ tsp Pepper

Instructions

  1. Preheat the oven to 400°F.
  2. Add tomatoes, onion, and garlic to a sheet pan, drizzle with olive oil, and toss with salt and pepper. Roast for 20 minutes until edges are golden.
  3. In a large pot, heat vegetable broth and cannelini beans over medium heat.
  4. Once the vegetables are roasted, transfer them to the pot with the broth and beans. Add basil leaves and crushed red pepper if using.
  5. Blend the mixture with an immersion blender until smooth.
  6. For the croutons, toss bread cubes with olive oil, salt, and pepper on a sheet tray.
  7. Roast the croutons at 400°F for 10-11 minutes until golden.
