Ingredients

  • 1 ½ cups chopped onion
  • 3 cloves garlic
  • ¾ cup fresh basil
  • 1 can (28 oz) fire-roasted diced tomatoes
  • ½ cup (4 oz) 1/3-less fat cream cheese
  • 1 ½ cups fat-free milk
  • ¼ tsp salt
  • ¼ tsp pepper

Instructions

  1. Heat olive oil in a large saucepan over medium-high heat and sauté the chopped onion until translucent.
  2. Add garlic and cook for an additional minute.
  3. Stir in the tomatoes and basil, bringing the mixture to a boil.
  4. Add cream cheese and stir until melted.
  5. Blend the mixture until smooth, then return it to the saucepan.
  6. Stir in milk, salt, and pepper, and cook for 2 more minutes.
  7. Serve with toasted bread or a sandwich.
