Ingredients

The base

  • 1 cup cooked brown rice

The toppings

  • heaping ¼ cup kimchi
  • 1 count Persian cucumber
  • ½ cup thinly sliced red cabbage
  • ½ count avocado
  • 8 ounces Marinated Tempeh
  • ½ recipe Peanut Sauce
  • ½ teaspoon sesame seeds
  • 2 count Thai chiles
  • to taste count lime slices
  • to taste count microgreens

Instructions

  1. Assemble the bowls with the cooked brown rice, kimchi, cucumber ribbons, red cabbage, avocado, and marinated tempeh.
  2. Drizzle peanut sauce generously on top and sprinkle with sesame seeds and Thai chiles if desired.
  3. Serve with lime slices and remaining peanut sauce on the side.
  4. Garnish with microgreens if desired.
