Ingredients

The rice

  • 3 cups cooked brown or white rice
  • 2 tablespoons rice vinegar
  • 1 tablespoon cane sugar
  • 1 teaspoon sea salt

The toppings

  • 1 recipe Baked Tofu
  • 2 avocados, sliced
  • 2 ripe mangoes, diced
  • 2 Persian cucumbers, thinly sliced
  • 2 scallions, thinly sliced
  • to taste Pickled ginger
  • to taste Pickled radishes, optional
  • to taste thinly sliced nori or seaweed snacks, for garnish
  • to taste sesame seeds, for garnish
  • to taste microgreens, for garnish
  • to taste Spicy Mayo, for serving

Instructions

  1. While the rice is still warm, toss it with rice vinegar, cane sugar, and sea salt.
  2. Divide the seasoned rice among 4 bowls.
  3. Top each bowl with baked tofu, avocado, mango, cucumbers, scallions, pickled ginger, and pickled radishes if using.
  4. Garnish with nori, sesame seeds, and microgreens.
  5. Serve with spicy mayo.
