Ingredients

The base

  • 1 recipe sushi rice prepared according to recipe directions
  • 2 tablespoons rice vinegar
  • 1 teaspoon sugar
  • 2 teaspoons toasted sesame oil
  • to taste salt

The toppings

  • 1 cup cucumber thinly sliced
  • 1 pound sashimi grade seafood (such as salmon or tuna)
  • 1 whole avocado peeled, pitted and sliced
  • 2 sheets nori cut into strips
  • 2 teaspoons sesame seeds
  • ¼ cup green onions

The sauce

  • ¼ cup mayonnaise
  • 2 tablespoons sriracha

The garnishes

  • as desired wasabi
  • as desired pickled ginger
  • as desired tobiko
  • as desired soy sauce

Instructions

  1. Prepare the sushi rice and let it cool to room temperature.
  2. Divide the rice between four bowls.
  3. In a small bowl, mix rice vinegar, sugar, sesame oil, and salt, then toss with the sliced cucumbers.
  4. In another bowl, combine mayonnaise and sriracha, and toss the seafood in this mixture or drizzle it over the bowls later.
  5. Arrange seafood and avocado over each bowl of rice.
  6. Spoon the cucumber mixture into each bowl.
  7. Add nori, sesame seeds, and green onions to each bowl.
  8. Drizzle the mayonnaise mixture over the bowls if not already mixed with the seafood.
  9. Serve with wasabi, tobiko, pickled ginger, and soy sauce as desired.
