Instructions
- Prepare the sushi rice and let it cool to room temperature.
- Divide the rice between four bowls.
- In a small bowl, mix rice vinegar, sugar, sesame oil, and salt, then toss with the sliced cucumbers.
- In another bowl, combine mayonnaise and sriracha, and toss the seafood in this mixture or drizzle it over the bowls later.
- Arrange seafood and avocado over each bowl of rice.
- Spoon the cucumber mixture into each bowl.
- Add nori, sesame seeds, and green onions to each bowl.
- Drizzle the mayonnaise mixture over the bowls if not already mixed with the seafood.
- Serve with wasabi, tobiko, pickled ginger, and soy sauce as desired.
