Instructions
- Rinse and drain the uncooked short grain rice, then combine it with water in a pot and bring to a boil.
- Once boiling, reduce heat and simmer for 15 minutes, then let it rest for an additional 10 minutes with the lid on.
- Mix rice vinegar, sugar, and salt in a bowl until dissolved to prepare the sushi rice dressing.
- While the rice cooks, prepare the toppings by shredding or chopping the imitation crab, carrot, cucumber, and avocado.
- Break the nori snacks into smaller pieces and mix mayonnaise with sriracha for the sauce.
- Once the rice is ready, mix in the vinegar dressing until well combined.
- To assemble, place about 1 cup of seasoned rice in a bowl and top with imitation crab, carrot, cucumber, avocado, nori, sesame seeds, and drizzle with sriracha mayo.
