Homemade Sushi Bowls

Ingredients

Sushi Rice

  • 2 cups short grain white rice
  • 2 cups water
  • 2 Tbsp rice vinegar
  • 2 Tbsp sugar
  • 1 tsp salt

Toppings

  • 8 oz imitation crab
  • 1 piece carrot
  • 1 piece cucumber
  • 1 piece avocado
  • 1 pack nori snack
  • 1 Tbsp sesame seeds

Sriracha Mayo (optional)

  • 4 Tbsp mayonnaise
  • 2 Tbsp sriracha

Instructions

  1. Rinse and drain the uncooked short grain rice, then combine it with water in a pot and bring to a boil.
  2. Once boiling, reduce heat and simmer for 15 minutes, then let it rest for an additional 10 minutes with the lid on.
  3. Mix rice vinegar, sugar, and salt in a bowl until dissolved to prepare the sushi rice dressing.
  4. While the rice cooks, prepare the toppings by shredding or chopping the imitation crab, carrot, cucumber, and avocado.
  5. Break the nori snacks into smaller pieces and mix mayonnaise with sriracha for the sauce.
  6. Once the rice is ready, mix in the vinegar dressing until well combined.
  7. To assemble, place about 1 cup of seasoned rice in a bowl and top with imitation crab, carrot, cucumber, avocado, nori, sesame seeds, and drizzle with sriracha mayo.
