Healthy Marinated Chicken Stir-Fry

Ingredients

The marinade

  • ΒΌ cup coconut aminos
  • 2 tbsp honey
  • 1 tbsp sesame oil
  • 1 tbsp lemon juice
  • 3 cloves garlic, minced

The stir-fry

  • 1 lb boneless skinless chicken breasts, cut into cubes
  • 1 medium onion, peeled and sliced into strips
  • 1 medium bell pepper, sliced into strips
  • 8 oz sliced water chestnuts, drained
  • 4 cups broccoli florets
  • 1 medium carrot, sliced
  • to taste sesame seeds (optional garnish)
  • to taste chopped cilantro (optional garnish)

Instructions

  1. Mix the marinade ingredients in a bowl.
  2. Cut the chicken into pieces and marinate it in the bowl.
  3. Prep the stir-fry vegetables.
  4. Heat a large skillet or wok over medium-high heat and add the chicken and marinade.
  5. Cook the chicken until fully cooked, about 5-6 minutes, then transfer to a plate.
  6. Add all the vegetables to the pan and cook until just tender, about 5 minutes.
  7. Return the chicken to the pan, toss to coat, and simmer for another 1-2 minutes before serving.
