Ingredients

Cookies

  • 3 cups all-purpose flour
  • 1 Tbsp ground ginger
  • 2 tsp ground cinnamon
  • ¼ tsp ground cloves
  • ¼ tsp ground nutmeg
  • ¾ tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • ¾ cup packed dark brown sugar
  • 10 Tbsp unsalted butter
  • 1 large egg yolk
  • tsp vanilla extract
  • ½ cup molasses
  • 1-2 Tbsp milk

Icing

  • 3 cups powdered sugar
  • Tbsp meringue powder
  • 4-6 Tbsp water
  • ¼ tsp vanilla extract

Instructions

  1. Preheat the oven to 350°F.
  2. Whisk together the dry ingredients in a mixing bowl.
  3. Cream together the sugar and butter until well combined.
  4. Mix in the egg yolk and vanilla, then add the molasses and milk.
  5. Gradually add the dry ingredients to the wet mixture until combined.
  6. Roll the dough out to 1/4-inch thickness between parchment paper and chill briefly.
  7. Cut into shapes and transfer to a baking sheet.
  8. Bake for about 8 minutes until slightly set, then cool on a wire rack.
  9. Prepare the icing by mixing powdered sugar, meringue powder, water, and vanilla until glossy.
  10. Decorate the cooled cookies with icing and let set.
