Instructions
- Combine the dry ingredients in a medium bowl and whisk until blended.
- In a separate bowl, mix the coconut oil and molasses, then add the coconut sugar and whisk until combined.
- Add the egg to the wet mixture and whisk until thoroughly blended.
- Pour the wet mixture into the dry ingredients and mix until just combined.
- Divide the dough in half, shape into discs, and refrigerate for about 1 hour.
- Preheat the oven to 350°F and line baking sheets with parchment paper.
- Roll out the dough to ¼ inch thick and cut into shapes.
- Bake for 8 to 11 minutes, depending on desired crispness.
- Cool the cookies on racks and decorate with icing or powdered sugar if desired.
