Healthy Gingerbread Cookies

Ingredients

  • 1 ½ cups almond flour
  • ¼ cup arrowroot or tapioca starch
  • 2 teaspoons ground ginger
  • ½ teaspoon ground cinnamon
  • teaspoon ground cloves (optional)
  • teaspoon fine sea salt
  • ¼ teaspoon baking powder
  • 2 tablespoons melted coconut oil
  • ¼ cup pure maple syrup
  • 1 tablespoon blackstrap molasses

Instructions

  1. Preheat the oven to 350ºF and line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine the almond flour, starch, spices, salt, and baking powder, then stir to combine.
  3. Add the coconut oil, maple syrup, and molasses to the dry ingredients and stir until a sticky dough forms.
  4. Chill the dough in the freezer for 30 minutes or in the fridge for up to 2 hours.
  5. Roll the chilled dough between two pieces of parchment paper to about ¼-inch thick and cut out shapes with cookie cutters.
  6. Place the cut-out cookies on the prepared baking sheet.
  7. Bake for 10 to 12 minutes, depending on your desired crispiness.
  8. Allow cookies to cool on the pan before transferring them to a wire rack.
  9. Decorate the cooled cookies as desired.
